Raspberry Smoothies, Delish!

How fantastic does it look?! There is nothing better to drink during the summer time than a smoothie (okay, okay possibly lemonade, especially pink lemonade). This actually was my late, right before I go to sleep, snack. And boy let me tell you, it turn out perfect! Currently I have been obsessing over the pineapple mango smoothies at McDonalds (even though I am slightly allergic to pineapple, I look past it. Mind over matter..right?!). I advise you to try them if you have not already, and if you have tried them, try them again! Oh, yes, my raspberry smoothie, make one for yourself too. I just used fresh raspberries, frozen yogurt, and a splash of milk. I blended it all together in one of those Magic Bullet food processors, you know the ones on TV. Well what do you know, stuff they actually sell on TV does work! At least this does, it works wonders. Now I am craving another smoothie, gotta go check the fridge for some fresh fruit.

Layered Nutella Bars.

Nutella Cheesecake Layer Bars

 – 8 Chocolate Graham Crackers

– ½ Stick Unsalted Butter, melted

– 16 oz. Cream Cheese, at room temperature

– 2 eggs, at room temperature

– ½ C. Granulated Sugar

– ¼ + 1 Tbsp. Heavy Cream

– 1 tsp. Vanilla Extract

– ¼ C. Nutella

 Preheat the oven to 325 degrees F.

Butter an 8 x 8 baking pan and line with parchment paper, making sure that the parchment is well pressed in the corners.  Set aside. 

In a food processor, pulse chocolate graham crackers until they become crumbs (like bread crumbs).  Add in melted butter and pulse until moistened.  Press graham cracker mixture evenly into the bottom of the prepared baking dish.  Bake crust in the center of the oven until set, about 12 minutes.  Set aside and cool. 

Clean out the food processor.  Add cream cheese, eggs, sugar, ¼ C. heavy cream, and vanilla extract.  Pulse until smooth.  Put 2/3 of the cream cheese mixture in a bowl and set aside.  Add Nutella and 1 Tbsp. of heavy cream to remaining 1/3 of the cream cheese mixture in the processor.  Pulse until smooth. 

To assemble, spread the vanilla cheesecake mixture over the cooled graham cracker base, being careful not to disturb the crust.  Pour Nutella cheesecake layer on top of vanilla layer and spread evenly.  Bake on the center rack of the oven for about 35 minutes, or until the center jiggles slightly.  Remove from the oven and cool completely on a cooling rack.  Refrigerate for at least 3 hours.

When ready to serve, lift bars out of the pan by lifting up the parchment paper (it should release easily).  Slice into 16 squares and serve.

Five Girls At Five Guys With Fanny Packs

This blog is a little late in the day (technically early in the morning), but since I have not slept yet it still counts as today. Right? Regardless of the actual day, today has no other word but awesome would do. Four other girls and I took a trip to Kings Island for the day. The weather at first this morning was rainy, but no worries, it cleared up just as we hoped for! It is always nice to go on days like that, because not as many people are at the park. We road just about every roller coaster they have to offer. My personal favorite of the day was the Diamondback. If you click on that link right there  you can check out a virtual ride of the roller coaster.

This was a moving dinosaur! Also, don’t you love our fanny packs.

After riding rides all day, it was finally time to call it a day. Of course that is after we stop by Five Guys. If you have never eaten at Five Guys I would do yourself a favor and go. Five Guys “Burgers and Fries” was the perfect way to end the day. Plus, I am still pretty full from eating it. Man does it fill you up!

Life doesn’t get much better than this. Great weekend.

Fruit Rubik’s Cube.

How great does this fruit cube look?! This would just be perfect for a fun little snack during the summertime. It has pieces of watermelon (my favorite), kiwi, and feta cheese. This new spin on a fruit salad is ingenious. I just love the whole idea. I defiantly will have to try this out this summer.

Sweet Cupcakes.

Cupcakes seem to be this ongoing fad, that I am completely indulging myself in. They are a new twist to the old fashion cake. Now, some people are having a mass arrangement of cupcakes at weddings and parties instead of a large magnificent cake. There are even shops popping up all over the map that are selling strictly just cupcakes. Society is getting on board to the whole cupcake obsession. There are even shows on television that are in full support of cupcakes. Shows like DC Cupcake and Cupcake Wars are becoming more popular and becoming and ultimate smash.

Aren’t they just precious? All of these great items can be found online at Sweet Lulu. They have so many great items that would be perfect for any kind of party. I discovered them via A Cup Of Joe, which is one of my favorite blogs of all time to read. All of this talk about cupcakes is making me hungry, and it just so happens that I have cupcakes in my fridge here at school. I am going to go grab one before my next class, so have a great day everyone!
