Awkward & Awesome

Backing up into your father’s car..in the driveway.

Waving at someone that does not see you so they do not wave back..and other people noticed the diss.

Seeing a grown woman wearing clear, plastic, light up heels at the fireworks.

People with terrible customer service skills who are trying to help you in the store, so basically you have to do their job for them.

Me going on a killing wasp rampage when I am trying to get my tan on.

How terrible I played in cornhole over the weekend.

Getting my days mixed up since I was off on Monday (not complaining though).

The little boy that was sitting behind my gals and I at the firework display, he was too cute. “Dad, these fireworks are like the ones in New York!”..”Yeah they are buddy, but you have never been to New York.”

Realize that you left for work a whole hour and a half early so you go shopping to buy time.

Buying new soccer cleats. Ah! I cannot wait until they come in.

Having an absolutely lazy day by doing absolutely nothing all day long.

This whole off on Monday thing threw me off of my game. Only a day late this time! Much better. I hope everyone had a great weekend.

Happy 4th Of July Everyone

I wish everyone to have an awesome 4th of July. Try to stay dry, since it is raining here..once again. Also, be safe with the fireworks, but enjoy them as well. It is time to bring out that red, white and blue. Thank you for all the men and women serving, especially overseas. Today is the day for celebrating America! Have fun!

Early Start To The 4th.

I woke up bright and early this morning to run in the annual 5k run that our city holds every year. I rained slightly the whole time, and then afterwards during the award’s ceremony it down poured. The run itself absolutely killed me and at times I was sure that I was just going to keel over right on the course. I did however finish it with a decent time, so I am pleased! I just need to keep a note to self: never do an INSANITY work out video the day before a 5K, because if so you will not have your legs. Thankfully they had bottled water, bananas and grapes at the end (the grapes were frozen, so they were perfect). I an now working on getting my legs back for the rest of the day.

While I be lazy since I got my work out already, I am going to post some patriotic photos! Also, this is pretty much the 5th year in a row that it has rained on the 4th of July. Crazy?! I would love it if the sun would come out and this rain would stop.

Layered Nutella Bars.

Nutella Cheesecake Layer Bars

 – 8 Chocolate Graham Crackers

– ½ Stick Unsalted Butter, melted

– 16 oz. Cream Cheese, at room temperature

– 2 eggs, at room temperature

– ½ C. Granulated Sugar

– ¼ + 1 Tbsp. Heavy Cream

– 1 tsp. Vanilla Extract

– ¼ C. Nutella

 Preheat the oven to 325 degrees F.

Butter an 8 x 8 baking pan and line with parchment paper, making sure that the parchment is well pressed in the corners.  Set aside. 

In a food processor, pulse chocolate graham crackers until they become crumbs (like bread crumbs).  Add in melted butter and pulse until moistened.  Press graham cracker mixture evenly into the bottom of the prepared baking dish.  Bake crust in the center of the oven until set, about 12 minutes.  Set aside and cool. 

Clean out the food processor.  Add cream cheese, eggs, sugar, ¼ C. heavy cream, and vanilla extract.  Pulse until smooth.  Put 2/3 of the cream cheese mixture in a bowl and set aside.  Add Nutella and 1 Tbsp. of heavy cream to remaining 1/3 of the cream cheese mixture in the processor.  Pulse until smooth. 

To assemble, spread the vanilla cheesecake mixture over the cooled graham cracker base, being careful not to disturb the crust.  Pour Nutella cheesecake layer on top of vanilla layer and spread evenly.  Bake on the center rack of the oven for about 35 minutes, or until the center jiggles slightly.  Remove from the oven and cool completely on a cooling rack.  Refrigerate for at least 3 hours.

When ready to serve, lift bars out of the pan by lifting up the parchment paper (it should release easily).  Slice into 16 squares and serve.
